The Lowkey Super-packed Salad 🌱🥗

Vegan Greens

Prep Time: 15 min | Cook Time: 20 min | Serving Size: 4 people


  • Mixture of Greens

  • Lettuce (Iceberg, Romaine, etc.)

  • Kale

  • Spinach

  • Arugula

  • 4 Peeled Carrots

  • 1 Yellow or Red Onion

  • 1-2 Sweet Potatoes

  • 1 Package of Firm Tofu

  • 1 Can of Chickpeas

  • 5-7 Strawberries

  • 1/2 cup of Walnuts

  • 1/2 cup of Almonds

  • 1/4 cup of Pumpkin Seeds

  • 1/4 cup of Sunflower Seeds

  • 3 tbsp of Olive Oil

  • 3 tbsp of Balsamic Vinaigrette

  • 1 tbsp of Lemon Juice


  • Cumin

  • Coriander

  • Ginger

  • Garlic Powder

  • Paprika

  • Red Pepper Flakes

  1. The best parts of any salad are the fried/baked goodies. Start off by prepping your tofu, sweet potato, and onion. Drain, dry, and cut your tofu into bit sized pieces, then dice your sweet potatoes and onion. Combine in the large salad bowl, and add in some olive oil as well as your seasonings of choice (paprika, garlic powder, pepper, cumin, oregano, and basil)

  2. Once you prepped the baked goodies, insert into the oven or air fryer and bake/airfry until golden brown.

  3. While the tofu and potatoes are cooking, it’s time to assemble the greens. In the large salad bowl, add the mixture of greens, peeled carrots, diced fruit, chickpeas, and nuts.

  4. Add your seasonings and oils/dressings of choice. We normally just stick with olive oil and balsamic vinaigrette, and let the spices do the work.

  5. Combine the baked tofu, potatoes, and onion into the bowl.

  6. Thoroughly mix together

  7. Viola! Enjoy!
