Vegan Cauliflower Chorizo Casserole

1-2 Heads of Cauliflower
1 Green Pepper
1 Purple Onion
1 Can of Black Beans
1 Can of Diced Tomatoes
1 Package of Vegan Chorizo
3 Jalapeño Peppers
3 tbsp of Olive Oil
Red Chili Flakes
1 Packet of Vegan Cheddar Cheese
Preheat your oven to 350 degrees Fahrenheit.
Prep the veggies. Chop the cauliflower into small pieces. Dice the green pepper and onion. Slice the jalapeños.
In a large bowl, mix the cauliflower, peppers, onions, beans, tomatoes, chorizo, and jalapeños.
Add in the spices and mix thoroughly. Get crazy with ‘em.
Pour the mixture into a 9” x 13” glass casserole dish or whatever else you can find
Cover with Aluminum foil (if possible, it’s not necessary, but it retains the moisture and cooks faster) and cook for 30 minutes. Remove the foil and add a layer of cheddar cheese on top. Garnish with extra jalapeños if you ain’t no b****!
Cook for an additional 15-20 minutes, until the cheese begins to melt/brown.
Remove from the oven and serve.
