Meatless Taco Tues...Mondays?! 🌱🌮

Vegan Cauliflower Tacos


Prep Time: 10 min | Cook Time: 25 min | Serving Size: 4 people


Ingredients

  • 1 head of Cauliflower

  • ½ cup of Vegan Mayo

  • ¼ cup of Oat Milk

  • 1 tbsp of Chile sauce/Hot Sauce

  • 1 tbsp Minced Garlic

  • ⅓ cup of Bread Crumbs

  • 1 can of Black Beans

  • 1 pack of Corn Tortillas

  • 1 Red Onion

  • 2 Bell Peppers

  • 1 Avocado

  • 2 cups of Arugula

  • Fresh Cilantro (to garnish)

Spices

  • Black Pepper

  • Salt

  • Garlic Powder

  • Paprika

  • Lime Juice

  • Coriander

  • Cumin

  • Cayenne Pepper


Serve With:

  • Quinoa & Broccoli


  1. Cut the cauliflower into small florets and mix together in a bowl with the mayo, hot sauce, oatmilk, and garlic. Then mix in the breadcrumbs and bake in the airfryer/oven until crispy (25-35 min).

  2. Cut the peppers and onions into thin slices and sauté on a pan with oil until tender and browned (15 -20 min).

  3. Combine beans in a pot with the hot sauce, garlic, cilantro, lime juice, coriander, and cumin. Cook on low heat for 10 min

  4. Once everything is finished cooking, slightly toast the corn tortillas on the open flame. Spread the avocado on each tortilla, followed by a handful of arugula. Next place on the cauliflower, then the beans, and lastly the sautéed peppers and onions.

  5. Garnish with cilantro and lime juice.

  6. Viola! Enjoy!
